In Japanese, ‘wa’ means Japanese and ‘gyu’ means beef. Wagyu is a breed of beef cattle that originated in Japan and which is genetically predisposed to concentrated marbling. This means the muscle features a high proportion of fat and resembles a slab of marble. The greater the marbling, the richer the flavour and the more melt-in-the-mouth it is. Food geeks like us have an insatiable need to know where our produce comes from. First and foremost, all DAWC Wagyu is Australian-raised. We source our Wagyu from a number of trusted producers and at any time, we can tell you exactly where the meat you buy is from.
To some, food provenance is a bit ‘wanky’. The question “who cares where my steak came from?” shocks us a bit. Those who want mass-produced, over-processed, run-of-the-mill, faceless, nameless, shameless grub can stick to their over-puffed supermarket chains. But if you want supremo Wagyu that will spoil you for any other beef ever again, then trust us to connect you with some of Australia’s best Wagyu producers.
Less water = more flavour! Remember that old-school cordial we grew up on before the sugar police rode into town? As a kid, you’d pour yourself half a glass of cordial and half water. Sweet, luscious, head-spinning taste sensation, right? But if a grown-up poured you a glass, it’d be one fifth cordial, four fifths water. Blaaah. Same-same with Wagyu beef. Less water means intense flavour that’ll knock your damn socks off! It doesn’t at all mean dry, tough meat. Wagyu is naturally so rich with flavoursome fat that it can’t help but be tender, juicy and utterly melt-in-the-mouth. Learn more about dry aged Wagyu beef.
