In Japanese, ‘wa’ means Japanese and ‘gyu’ means beef. Wagyu is a breed of beef cattle that originated in Japan and which is genetically predisposed to concentrated marbling. This means the muscle features a high proportion of fat and resembles a slab of marble. The greater the marbling, the richer the flavour and the more melt-in-the-mouth it is. Less water = more flavour! Remember that old-school cordial we grew up on before the sugar police rode into town? As a kid, you’d pour yourself half a glass of cordial and half water.
